Project Consultant

Martin Thorson is a veteran executive in hospitality, food & beverage, and live entertainment with more than 25 years of executive leadership across stadiums, arenas, convention centers, and major events. His track record spans Sodexo Live!, the Tampa Bay Buccaneers, Levy Restaurants, Spectra, SMG (now ASM Global), and Wood Dining Services—delivering operational excellence, strategic growth, and elevated guest, fan, and attendee experiences.

Previously, Martin was Vice President of Stadium Business Operations for the Tampa Bay Buccaneers (2019–2023), where he played a central leadership role during the franchise’s Super Bowl LV championship season. At Raymond James Stadium and the Advent Health Training Center, he led hospitality, retail, and capital project initiatives, while managing key partnerships with Legends Hospitality and Fanatics. His vision and operational excellence helped elevate the Bucs’ stadium experience to the highest standards in the league — with a clear focus on guest satisfaction, revenue growth, and seamless event execution.

Martin has also held senior executive roles with Levy Restaurants, Spectra, SMG, and Wood Dining Services, managing multi-million-dollar business units across North America and Europe. At Levy, he directed a $250M+ portfolio of iconic venues; at Spectra, he helped reposition the brand in a competitive national market; and at SMG, he led food and beverage operations for over 70 venues while playing a pivotal role in the company’s $600M acquisition. Across these roles, he consistently delivered measurable results — from EBITDA gains to team growth to client retention.

His standout career moments include launching hospitality at Mercedes-Benz Stadium, leading operations for Formula One’s inaugural U.S. race at Circuit of the Americas and organizing large-scale disaster relief foodservice during Hurricane Katrina.

Martin brings a powerful blend of strategic insight and frontline experience, making him a valuable partner to organizations aiming to elevate every aspect of the guest, fan, or attendee journey.

Martin’s favorite food is filet (with a glass of Cabernet); sushi is a close second. His favorite museum store purchase is a plush toy for his dog.
